I saw this recipe on The Vegan Corner‘s Youtube channel. I changed the ingredients a little bit with literally whatever I had in my fridge.
Cook the brown rice in a rice cooker or as per your preference. Dice the steamed potatoes for later.
Heat a small amount of olive oil in a pan over medium heat. Saute the chopped onion until lightly brown.
Add 3-4 tbs of tomato sauce, 1 tsp of cayenne and chili powder. Stir in the mushrooms, cherry tomatoes, jalapeno for 3-4 minutes. Pour in a small amount of water then stir in the green peas and diced potatoes, let it cook for couple of minutes.
Add the cooked brown rice and mix everything together. Salt is optional.
